When Life Gives you... Bananas?

A part of me truly dislikes the saying:  When life gives you lemons, make lemonade.  I know that the meaning behind it is full of wisdom.  You should make the best of whatever situation you’re in.  The problem is, that whenever the saying comes to mind, it usually means that life is giving me lemons.  And that is not always fun.

Nate and I were supposed to have a date night tonight, but he called around dinner-time to say that he’d have to work late.  He had to work until 11pm, to be exact.  And instantly I felt my spirits drop. It didn’t help that work had been extremely hectic, and I had pretty much survived by continuously thinking about spending an evening with my hubby.  Sigh…

But on the drive home, as I listened to Chris Allen sing Live Like We’re Dying, I decided to stop pouting and to just make the best of an evening alone.

Sooooo….  I took out my favorite cookbooks….

… and made a huge pot of corn chowder.  I had some leftover ham in the freezer, so I tossed that in as an extra treat.  There’s something about cooking a pot of soup that just calms me down. 

Baking a pie on the other hand…

People always tell me that I make a great pie crust, but they do not see the excruciating agony that goes behind just one of my crusts.  Almost every time, the first crust I make sticks dreadfully to the countertop or completely falls in half when I try to delicately lay it on top of my pie pan.  So then I make a completely new crust and this one usually comes out better, although I have to carefully mold it together to patch up the thin spots.  It’s an interesting thing to see and is proof that a cooking show on television is NOT my calling.  But if it all comes out in the end and I present the pie with a smile, then all is well that ends well. :)

So anyway, onto the subject of bananas.  As I was mulling over the whole ‘making lemonade when life gives you lemons’ thought, I came to the conclusion that I really should make some fresh lemonade… just cause. But I only had one lemon and that wouldn’t make much, so I instead grabbed for the large bunches of ripe bananas that were sitting on top of my fridge.  Hey, they’re both yellow!!  :)

Nate and I are having his brother and one of his gal pals over tomorrow night, and Nate had asked me to make my Banana Fluff Pie. So I sliced the bananas, made the fluffy filling, and poured and layered the thick goodness into my crust.  And it did help me to feel better, especially since it made my slightly lacking crust look pretty.

But the happiest moment of all came when Nate called again and said, “Hey, Hun, I get to come home early!”

Elliptical trainer, or torture?

Last night at the gym was like a who’s who of people Kelly used to date.  Always fun right?  Meh, not so much.  Although it was amusing when both of them were working out next to each other.  I actually didn’t mind running into the one, we dated about a billion and a half years ago in high school and are friends now, the other one I see there pretty much every day and we just ignore each others existence.  Gotta love small towns.

After two days in a row, I am officially sick of the elliptical.  I originally had the time set for 40 minutes, but when it hit 30 I couldn’t take it anymore and hopped off.  I made my way over to the stair master and did that for the last 10.  I personally break much more of a sweat on the stair master than the elliptical any day.  Then it was time for more stretching and ab work, I threw in some push-ups yesterday also.  Knee is still feeling pretty good, I took a quick jog to the mailbox last night (where I had the cutest card waiting from my old roomie Jill, thanks Jilly!) and didn’t have any pain so everything is looking good for a Monday return to running.

I had been thinking about last nights dinner all day, and could not wait to go home and make it.  Last time I went grocery shopping I picked up a can of black beans, and still hadn’t used them, and after discovering some frozen chicken in the freezer I knew just what I could make.  A nice chicken, cheese, black bean, and veggie quesadilla.

These tortillas are really small, I couldn’t find the medium size, so instead of just filling half and flipping one side over like I normally would I used one tortilla as the bottom, and another as the top.  On there is the black beans, onion, red pepper, orange pepper, and weight watchers Mexican cheese.

All put together with the chicken added.  I used a reduced sodium packet of Old El Paso Taco Seasoning to flavor the chicken, and a spoon-full of fat-free sour cream on the side for dipping.

And there are leftovers, so tonight’s dinner will probably be some sort of variation of this, involving all the same ingredients.  After dinner I settled in on the couch for a long night of Olympics watching.  I was so happy for Lindsey Vonn and her gold medal!  She was absolutely sobbing when they were trying to interview her.  Sadly I fell asleep before the Halfpipe competition ended, and even know I know the results I’m going to try to watch the video clips at some point today.

Chuckwagon Sallys Spicy Spinach

I made this today and it was great.

Saute one sliced red onion, one sliced red, orange and yellow pepper in one stick of unsalted butter and one quarter cup of extra virgin olive oil

Add one 16 ounce package of sliced mushrooms

Add two packages of frozen spinach and two tablespoons of Chuckwagon Sallys Wild West Seasoning

Cook until heated through

Add one cup of shredded Monterey Jack Cheese and one cup of shredded Cheddar Cheese and cook until cheese is melted.

Serve with your favorite meat

Happy Valentine's Day?

So, yesterday I woke up to my children fighting…at 5:30am. Happy Valentine’s Day. How come they just know the day all you want is to sleep in past six, yet they are determined to never let that happen? So, I mustered up my patience and strength and walked downstairs to get the only thing that could brighten my  morning- coffee. Oh, please let it be delicious – and strong enough to get me through the morning. Why did I stay up last night? Was that movie worth being this tired today? Ugh…

Lets move on to dinner. My romantic dinner involved inviting the parents over, so the six of us (myself, hubby, 2 children, and grandparents) could enjoy a nice dinner together. So, my husband pounded out some chicken, I made a tomato sauce and a “healthy” (I use this term lightly) alfredo sauce. Oh- and the best part- green beans with oranges and an orange vinaigrette dressing.  Delicious. The green beans were possibly the best beans I have ever had.

Now, of course, the grandparents brought chocolate for the boys, so they were flying high after dessert, and I was hit with a “Flicker the flashlight” in my chest, but overall, good food, good family, good night.

Whole-Wheat Angel Biscuits: a healthier version of a Southern favorite

Every now and then I get a hankering for an old Southern favorite.  This week it was angel biscuits, also known as “honeymoon biscuits” because with yeast, baking, and baking soda, they are just about guaranteed to rise, even for novice bakers.  The original recipe featured ingredients we don’t use for health reasons–like lard or Crisco–but the recipe is easily adaptable.

makes about two dozen biscuits–or a bit more

Ingredients: use organic if you can

  • 2 1/4 cups whole wheat pastry flour (Yes, you can use a hard wheat flour, but your results will not be as good.)
  • 1/4 cup wheat gluten  (Gluten is only bad if you’re sensitive to it.  It’s just wheat protein, and it helps whole-wheat flour build flexibility.)
  • 1/4 cup sugar (okay to use a little less)
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 cup (1 stick) cold butter
  • 1 cup buttermilk or kefir (You really, really need this ingredient, although Alton Brown has tried a lemon juice-milk substitute on his show “Good Eats” that looked like it might work in this recipe.)
  • 1 big tablespoon of yeast, dissolved in 2 tablespoons of warm water (See here for why you want water the temperature of a good bath.

Method:

Combine dry ingredients in a large bowl.  Use a whisk to mix ingredients together and add lightness to the mixture. Now cut the cold butter in quarters, lengthwise, and then slice the butter thinly.  Work the butter into the dry mixture quickly, using a pastry cutter (shown here).  If you do not have a pastry cutter, you can use a fork, but it will take longer, and you’ll need to take breaks to keep the butter cold.

After you cut in the butter, the dry mixture should have a mealy texture.  Now stir in the dissolved yeast and buttermilk or kefir, just until you’re sure that the yeast is fully incorporated.  Stop.  Do nothing else except cover the bowl securely.  Biscuits, like pie dough, do not like to be overworked.  There is enough liquid in this mixture that the dough will sort of kneed itself.Can you see the bits of butter?  That’s good!  Those will help build flaky layers when you roll out the dough.  Now walk away for several hours or even overnight.  Here’s another dough picture while you wait.  Mmmmmm:  bits of butter.

Okay, let’s assume you’ve given the dough a chance to rise a bit.  It’s relatively cold in our house right now (high 60s F), so I just left the bowl out overnight (securely covered).  Preheat your oven to 450 degrees F.  Now you need a bread board (or any clean surface).  Take out about a third of the dough.  Dust some flour on your bread board, and plop on the dough.  Add some more flour to the top of the dough (just a dusting!), and roll the dough about 1/2 inch thick–or maybe just a little thicker.

Using a round cutter (or old clean can, both ends removed, as you see here), cut out biscuits.  Scoop up the leftovers, reform them, and cut more.  

Put the biscuits on a shiny pan and bake on the middle oven rack at 450 degrees F for about 10 minutes (in other words, 9-12 minutes).  Oven temperatures vary, so please watch closely.Take the biscuits out of the oven.  Admire them.  Smell the combination of biscuit and yeast.

Think about whether you need butter.

No, no butter for me, thank you.  I’ll just add a slice of turkey ham steak and some apple butter.

Oh–you’re wondering what to do with the leftover dough?  Refrigerate it and use it.  It’ll keep well for about a week, getting more yeasty the whole time.  You could have another round of breakfast biscuits with sausage and red-eye gravy.  Consider making smaller biscuits to fill with cream cheese and pepper jelly for appetizers.  Add slices of cooked bacon (or turkey bacon) and tomato with lettuce in the summer for a good Southern BLT lunch.  Serve biscuits with dinner instead of rolls.  You’ve got lots of options!

Welcome...

Hello, and welcome to my new blog!  Here you will find the kitchen adventures of an everyday home cook.  The dishes I make are usually simple, and made with with common kitchen staples.  Occasionally, I’ll get a bug to make something which requires extra work or an ingredient which requires a special trip to the grocery store.

Regardless, I am starting this blog to chronicle my love for baking and cooking.  A major part of this is to have a digital copy (hopefully with photos!) of many of my favorite recipes  I hope you’ll find at least one worth replicating in your own kitchen!

A Little Motivation

Food Network is amazing! This is nothing new. I’m not crazy about cooking unless I know what I am doing and unfortunately that’s just not the case about 80% of the time. Generally I like to sit down and watch Food Network and that usually inspires me to get into the kitchen. I know I am a bit late but I just discovered Food Network in HD! I am not a great photographer but doesn’t it look awesome! This just changed my life. I am going to have to send up some extra prayers that I won’t get too spoiled.

Danny just brought a lovely new HDTV to my doorstep the other day and there’s nothing like a fresh box of butter and Paula Deen in HD to inspire you to get in the kitchen! I am fully aware that I am going to need to get my bottom into the kitchen more once Danny and I are married and after this discovery, I don’t think that will be a problem.

I wish I had more to say on this but Ellie Krieger wants to teach me how to make four-cheese baked penne and chocolate-almond meringues! Don’t wanna keep her waiting, she’s only got 30 minutes!

Oh, and we are now 4 weeks away from the big day!
